I wrap my asparagus in pancetta and grill it. Then use a lemon cream sauce(cream, lemon zest, dash of lemon juice and white pepper-heated thru) to serve it over with diced chives. Stuffed pork tenderlion, spinach/ricotta/ground pepper/scallions, homemade applesauce with fresh apples & cinnamon, grilled squash and a pear crisp with harvest pears and cinnamon topped with oats and brown sugar.

slice your filet in half, so you have two pieces like a sandwich. In the middle place lemon slices, whole scallions or sliced onions,then top with 1 tsp butter, on the other half rub a crushed piece of garlic, You can wrap in foil and pan roast, grill on the grill, or broil for just a few minutes on each side, or until cooked through. I serve with a lemon butter to lightly drizzle over the top. Some people take it apart and take out the insides, but I slice it so that I get all the stuff in the middle too. If you like quiche, then make a quiche lorraine, with an additional cup of broccoli diced small, and 2 cups shredded cooked salmon, from the recipe above. LTG, I think that is a great idea to make stockings for both GDs....I think I will make that a plan!
Gia, I love doing that with chicken and making "beer can" chicken; that's a great BBQ method. I love asparagus, but absolutely NEVER out of a can (mushy, mushy, mushy).

the younger kids are 3, 5 & 7 so we are watching the Halloweentown series, the 12 & 14 year olds are watching saw IV and who knows what the 17yo is doing."The one true thing that I know about myself is that I will never stop learning things about myself!":nutso:
