    Is CORNED BEEF and CABBAGE really IRISH ??

    OK...Come on all of my DEAR IRISH FRIENDS...Fess up..Is it really an IRISH tradition to have corned beef and cabbage on St. Patrick's day ?? I have never been to Ireland on St. Patties day so I can't speak from personal experience as to if it is served in the local PUBS....but I have a feeling that it is somehow an American tradition and not really Irish at all...Am I right ??? If it is Irish them please post your very best recipes so I can do it right (the Irish way).
    And while you are at it...how about the wearing of the GREEN ??? Please do tell what and how the REAL Irish traditions are ???
    I also want the truth about leprechauns the WHOLE TRUTH and nothing but the truth. I believe they are REAL, do you ?? Bless all your sweet little Irish hearts.

    I checked out Oney's link and it gave lots of good info. I think I will have bacon and stir fried cabbage with sour milk for Breakfast and a pork roast for Din Din..

    Zenny, Did I see you post about your folks being from Glas...???
    I have worked in the spiritualist church in downtown Glas several times..they even invited me back (go figure?)...but the parking is next to impossible...any hints ???

          Is CORNED BEEF and CABBAGE really IRISH ??

          Bacon & Cabbage:
          3 pounds Irish boiling bacon (shoulder or collar)
          1 small head cabbage, cored and quartered
          Parsley Sauce for serving
          Boiled potatoes for serving


          1. Put the bacon in a large saucepan and cover with cold water. Bring the water slowly to a boil, then cover and reduce the heat to medium-low. Simmer, skimming the water occasionally to remove the foam, for 1 1/2 hours (about 30 minutes per pound), or until the meat is tender when pierced with a fork.
          2. About 20 minutes before the bacon is cooked, add the cabbage. Cook for 15 to 20 minutes, or until the cabbage is tender, but not soggy. Transfer the bacon to a serving dish, and let cool before slicing. Drain the cabbage, reserving 1/4 cup of the cooking liquid for the Parsley Sauce, and transfer to a serving dish.
          3. To serve, slice the meat and serve it with the cabbage, potatoes, and sauce.
          Parsley Sauce
          4 tablespoons unsalted Irish butter
          3 tablespoons all-purpose flour
          1/4 cup bacon cooking liquid
          1 1/4 cups hot milk
          Salt and pepper to taste
          1/2 cup minced fresh flat-leaf parsley
          To make parsley sauce:
          In a small saucepan over medium heat, melt the butter. Gradually stir in the flour. Cook for 1 to 2 minutes, or until blended. Slowly stir in the cooking liquid, then the milk. Bring to a boil and cook, whisking constantly, for 3 to 5 minutes, or until slightly thickened. Add the salt, pepper, and parsley and cook, whisking constantly,until the sauce is smooth

                What kinda Celtic music ??? I used to love the Irish pubs ...for the Jameson and for BARDS and the Celtic drums...That reminds me ...we were on the north coast at the whiskey factory 1 1/2 years ago and they made me an official whiskey taster..I even have a certificate to prove it....somewheres around here. I loved the Giants causeway...except the walk up the hill was a real killer.

                Anyone else been to newgrange ????

                  Hello EvieLou, one 2many.IAD, brittzak and zenstyle and Irish!! During my hiatus from the keyboard (no computer... had to $$$ a brandnew one) anyhow, I did often think of you and your amazing personalities which do filter thru the ethers! Mostly, I've been dashing in and out of ODAT which seems to be the best I can do these rather dark days.
                  Showing my age, I remember buying the cut of beef and then corning it myself. You really couldn't find it "ready made". More often, we would corn a tongue: beef that is. For me, I'm going to past on it this year. The fat and salt content are both way above that which my depleted system can handle. The cabbage and the carrots raw and juiced would be good.:H

                    Gelgit......your quite the trooper ! Corning your own beef........wow! I bet that was good ! We have it every St. Paddy's Day ( Corned Beef & cabbage ) My wife and kids are part Irish. Me. give me rice and beans....I'm Puerto Rican ! Ha! LOL IAD.

                            ah, zen.... It's saltpeter and it's what jail prisoners used to get a weekly dosing in their food because it was supposed to keep men from getting horny!! Oh well, totally not necessary for making corned beef or for prisoners!
                            Invite me for beans and rice. I'm also a Swede who loves it HOT.

                              Salt Peter.....yes I know it well ! They gave it to us when I was in the Army ( Basic Training ) It was that dreaded drink dispenser in the corner......at dinner time. Ha! But we knew about it ! And avoided it ! Ha..so we avoided the limp dingus eppedemic ! All our girlfriends were the happier for it on weekends ! Ta Da! Ha! ( I'm going nuts)
