If you cut around them in the middle and pull it away from the stone - basically you have two halves without the stone - then criss cross the flesh and turn it inside out so the skin is on the inside - that's the easiest way.

Hi guys.... sorry I haven't been in touch for such a long time....things don't always go as we plan, do they? :H just hoping one and all well .... it is a lovely sunday early afternoon here, and have just had the "Hokitika Wild Foods Festival" - the west coast is literally crazy for a week, and then my best mate's dad died, just been to his funeral..... blessings all

Probably not ripe enough. Try heavily banging a knife in the middle of the stone, like you were trying to chop it in half and then twisting the knife. The stone should come out.
