I prefer my brie without the rind.
The rind is rather bitter I find.

Love it baked sans rind in a wellington-type crust with some sweet marmalade (apricot perhaps?) and slivered almonds inside. Can spread on some substantial crackers or bread.

i have to confess i didn't even know there was an option NOT to eat the rind... in all of my BRIE eating days and ther have been very veryvery many i have ner seen any one remove the rind... so there you go hey!
