Look...I'm going away next Friday for two nights..not a week...you've not got rid if me yet.

And as hubby is a workaholic, laptop and connection will be with us, no doubt, although I may ignore it.

It's certainly cooling down in QLD. Got out of the Cinema at 4.00 pm and was almost cold. It's under 30 degrees C at last.

I'm actually not sure if I've ever had Spam. I was raised in a cult that couldn't eat piggy products although I now LOVE bacon sarnies and had roast pork for dinner this evening.

I was in the military for a while and was never sure what was in the ration packs.

There is a small can of spam in the cupboard but I am not sure I could bring myself to eat it...:upset:

I actually got some home style (yep, Greek) easter eggs from a lady (client, but i prefer the words human being) i work with on the w/kend. 'Greeeg....Greeeeg. Come here darlink. I got something fwor you. I boiled these for 15 minutes then painted them red. Take, darling Gious'. Mmmmm, nice.

Bet you're gonna love that month off Spamious! Where are you off to?

Marika checking in....I missed all of youse over the weekend.
Have been camping at the beach - lots of kiddies there for the young 'uns and a couple of mates for us big ones. I have a bit of a tan - weather was awesome (ah the weather, the weather G) Drinking was decidedly moderate - thanks to the moderating friends we went with. And I learnt truely how important the people I hang out with & the places I go will affect my behaviour (I know I know...slow learner) That party I went to the weekend before...I'll never ever again hang out with those people - 98% of them are alkies, but because they all drink they think it's OK. Incidentally one of them- a woman my age - has just been sent to jail for murder when she purposely ran over someone in her car (murder...not manslaughter) at 4am when she was loaded. I say this only because it's a very real possibility of where we might end up if one doesn't get a grip.
Anyway, pls excuse my ramblousness - I must off to earn the $$ now - I'll read back this arvo....I am wondering if there was a special Easter showering...did Greenie drop the soap again?? Did Bridge regenerate or date or both?? Has TF started chopping wood yet?? How hot is Spam??? What Easter treats did Missy B make?? Did G get any eggs?? Where's Ronnie been hanging out??Has Cindi dropped in?? And so much more....

I just got this off the spam.com website.

Mini Spam Nachos burgers.

Ingredients3 plum tomatoes, seeded, diced
3 tablespoons diced red onion
3 tablespoons red wine vinegar
2 teaspoons chipotle chile en adobo sauce, minced
2 teaspoons honey
1 (12-ounce) can SPAM? Classic
12 slices Cheddar cheese, cut into small squares
1 ( ) package Hawaiian sweet rolls, lightly toasted
1 cup guacamole
6 sliced red pickled jalape?o peppers, cut in half
Directions1.In medium bowl, stir together tomatoes, onion, vinegar, chile en adobo sauce and honey.
2.Slice SPAM? Classic into 6 (1/2-inch) slices. Cut each slice in half. Lightly grill or fry SPAM? until lightly browned on both sides. Top SPAM? with cheese; heat until cheese begins to melt.
3.Place grilled SPAM? Classic on bottom halves of rolls. Top each burger with guacamole, tomato-chipotle salsa and 1 piece jalape?o.

SPAM oven roasted turkey mega muffins!!!

Ingredients4 large eggs
2 cups heavy cream
1 (6-ounce) package cornbread stuffing mix
1 ( ) can SPAM? Oven Roasted Turkey, cut into 1/2-inch cubes
1/2 cup dried cranberries
Directions1.Heat oven to 350?F. Lightly grease extra-large muffin or popover pan.
2.In large bowl, mix eggs and cream. Add stuffing mix, SPAM? Oven Roasted Turkey and cranberries; stir to evenly mix. Let stand 5 minutes.
3.Fill cups 2/3 full. Bake 25 to 30 minutes or until set in center. Let stand 5 minutes before removing from pan.
Notesi.If desired, serve these mega-muffins with Spiced Cranberry Sauce: In bowl, combine 1 cup jellied cranberry sauce, 3 tablespoons thawed frozen orange juice concentrate, 1 tablespoon honey and 1/4 teaspoon ground allspice; mix well.
