Jackie.... frozen fries are so convenient but fresh-cut fried potatoes can't be topped. And the secret is to double-fry them. I had done it for years and then saw this girl chef on TV who was showing how to make the perfect fries and that was her secret - double frying. You fry them until about a minute away from being ready - drain them onto kitchen paper and then just before serving, pop them back into the hot oil to crisp them up and brown them a bit. Salt as soon as they're out of the oil and "bon appetite".

EVOO is Extra Virgin Olive Oil. Tastes great but doesn't make crispy chips. Soya or corn oil will tho'

I also often use the frozen variety - despite the taste difference. When I have to get dinner ready in 35 mins or so, they taste fantastic

I think the whole dinner cost less than a pound. It wasn't one of my best culinary achievements 'cos basically I couldn't be assed.
