I have never had risotto but a cheesy risotto sounds divine with roast veggies. What veggies have you got? I had some at a taverna recently and they were onions, eggplant, zucchini and bell peppers grilled with a balsamic vinegar dressing. They were to die for. Add a big chunk of feta and some grilled rustic bread and I'm in heaven.
Let's not get into food porn tonight. I've only just learned how to post those new pics...
