    I meant to ask, but as is typical, the conversation on the Army veered away in another direction. How do you prepare the pheasants?
    Well as they come to me freshly shot, they get 'hung' for at least a week, then I pluck them, remove the insides and truss them pretty much the same as a chicken.

    If I am using them for a recipe, (I have cooked game terrine today for starter tomorrow) then I skin them which is much easier and roast them in foil .............

              Happy christmas eve-ning Army - it all can be a bit fraught sober can't it! I went off on one at all these bloody men around me - no daughter to sort of stick up for me - have to say the fleeting thought of a triple vodka or three would sort them all out ----eeerrrmmm, maybe definitely not. All calm here now however and thinking of all the happy little faces in the morn.

                  Sounds delish, actually - they must still be very moist and tender that way.
