Yep I do know there was a controversy alright as to it origin description. Didnt know about it being used as a weapon, hasnt managed to kill me off yet though. I use it quit a bit, find it very hand to have in the freezer especially the sausages & mince.Ethanol is a toxic chemical, why would I drink it?

Hey Sunny - I used to love that pregnancy tiredness......nothing like it.
A big HI to everyone else.
Today I discovered pistachio marzipan.......can't believe that I was making it the plain way before......it is so beautiful and way too morish. I have just made 2 stollen with it and we have eaten 1 already.
Feeling very calm at the moment, christmas hasn't been too stressful so far even with the finger mishap. Or maybe the finger accident has made me reprioritise everything. Or maybe it is because I am not hosting dinner this year.
Anyway back to the hospital tomorrow to see what has been saved of the finger. And my husband is home. All to do is ice the christmas cakes and make a trifle, easy peasy.

Christmas Fruitcake Recipe
Christmas Pecan Fruitcake (East Texas, USA)
1 qt pecan halves
1 1/2 oz. lemon extract
4 cups all purpose flour
3 cups sugar
1 tsp baking powder
6 eggs
1 lb butter
1/2 lb red and green candied cherries, sliced in half
1/2 lb candied pineapple, sliced in chunks
1 lb golden raisins
Place pecans and lemon extract in a tightly closed fruit jar and let stand overnight.
Prepare a tube pan by greasing, flouring, and lining bottom with brown paper.
Cream butter and sugar. Add eggs; mix well.
Add dry ingredients; mix well.
Add fruit and nuts; mix well (with hands.)
Spoon into tube pan, slightly flattening top.
Bake 3 hours at 300 degrees; cover top with foil the last 30 minutes, if necessary.
Cool 30 minutes; remove from pan.
Serve plain, or with lemon hard sauce.
Store wrapped well in foil.
A dear colleague from East Texas gave me this recipe in 2002. This is what she wrote at the bottom:
"My mother made this cake every year for Christmas, and it is the only fruitcake my family liked. It is easy to make and delicious. It is also a great cake for Easter, if you can remember to buy and and save the candied fruit."
P.S. I use parchment paper to line the bottom. It probably didn't exist when my friend's mother made the cake.
Also, do you guys use the metric system? If you do, you do the math.:H

I still line my christmas cake with brown paper. And google only recently told me what a quart was. No idea what a golden raison is - might try this in a few weeks with just normal ones.

Let me know what you think of it. The lemon flavor makes it a different kind of fruitcake.

Grinch here......
I just had a revelation, all due to a TV commercial. I would be happy and excited about Christmas if my DH were to give me a Christmas surprise straight from his heart. It has never happened. I don't need anything, nor would I want anything extravagant, but would like to believe that maybe he thought I was worth the effort. I always give generously of my heart (and wallet) to him all year round, and to everyone I love.
No pity party here, just a tad sad as the realization hit me.

Morning all to come. I am off to work. Very busy time of year, but I am going to take every public holiday next week and not feel bad about my staff working hard. They all want the hours/money anyways. Plus my company isn't doing that great and may not be around the this time next year.

Morning Undies and Internationalists...must get me to a printer to get your recipe on file Juja...it will be a new year cooking conversion test in the new home.
Have to get the locusts out today to buy their secret Santa presents. We put our 5 names in a hat and draw them out and buy a present with a limit of $20 so you have to really think about the person your buying for. Middle one drew his dad so went on line before the lunchtime deadline yesterday and designed a tshirt for him...things like that...other than that gifts are really not a big deal for us. Best thing is if we can settle the house this week, which is not looking good but will know more today. Either way it will happen.
