5 sheets of thin phyllo pastry (the kind used for baclava)
EVOO
2 cups grated zucchini
2 large eggs
1 cup crumbled feta
Chopped fresh dill to taste.
1 cup milk
Salt
2-3 tbsp of hard cheese grated (I use kefalotiri. It's the Greek equivalent of parmesan)
Oil the pie pan with EVOO
Scrunch the sheets up, spreading them out evenly so they look like this -
Drizzle a little EVOO over them. Put the rest of ingredients except the hard cheese in a bowl and mix well. Salt to taste. Cover the phyllo sheets with the mixture. Top with the grated cheese.
Bake in preheated oven at 180C (not air) for about 45 minutes or until browned on top. Best served warm.
I have an even easier recipe for a feta cheese pie but it's one that has to be eaten right away. It gets rubbery after it's cooled. Mind you, we usually eat it so fast that it doesn't have time to cool.For every 60 seconds that you are angry, you lose a minute of happiness.
