    Do you not have a measuring cup? Anyway, 8 ounces of liquid, such as milk or water, is a cup. About the size of a regular coffee mug. Dry ingredients weigh less and I don't have a scale to tell you how much 1/2 cup of oatmeal weighs.

    No, I just use that because it's lower in fat. Use whatever milk you want to.

    wax paper, is that like greaseproof paper?

    Yes.

    Can I really cook them first and THEN freeze them?

    Yes, as long as you cool them completely, then wrap them well in tinfoil or put them in a food bag that you tie or a zip-lock one. Then thaw them out first and then warm them up in microwave.


    Funny you should mention juice, I was thinking of maybe juicing fruit and taking it that way.

    Sounds like a good idea.

    Glugged down my chia seeds in water today...poxy horrible.

    Gonna incorporate them into my bread I think.

      howdy oney this is what i had on day three of my eat right not shite thing:

      an l glute tablet after a short weights work out (no cardio today, been a lazy day)
      Fish and chips, (my treat for the week), a couple of cans of diet pop and for tea I am having a small piece of steak with 3 fish goujons, lettuce, tomatoes cucumber, lighter than light mayonase and peppers, courgettes, and onions.
      I love people who make me laugh. I honestly think it's the thing I like most, to laugh. It cures a multitude of ills. It's probably the most important thing in a person.

        Another idea is chicken or pork with veggies on skewers that you can either BBQ or grill/broil in the oven. You can use wooden or bamboo skewers but metal ones are better because they don?t burn and they will transmit the heat to the inside of the meat and veggies. They are very simple to make.




        Grilled Chicken or Pork and Vegetables

        Ingredients:


        For the marinade you will need

        1/3 cup olive oil
        1/4 cup lemon juice
        4 cloves garlic, coarsely chopped
        1/2 teaspoon salt
        1/4 teaspoon lemon pepper or black pepper
        ? tsp dried oregano or tarragon

        For the skewers you will need

        Skinless, boneless chicken thighs or breast meat cut in 1-inch cubes and then cut horizontally so that they are ? an inch thick.
        Or lean pork cut in pieces the same size as above
        Green and red or yellow bell peppers, cut in 1-inch squares
        Red onions cut in chunks ? inch thick pieces
        Fresh mushrooms about 1-inch in diameter
        Zucchini (courgettes) cut in ?-inch circles (optional)
        Cherry tomatoes (optional)

        Note, if you grill the skewers in the oven, you need to place them on the oven rack and have another cookie sheet under it to catch any juice that drips.
        Combine all of the ingredients for the marinade and put it in a large glass bowl or glass baking pan. Add the meat and the vegetables and marinate covered in the fridge for 8 hours. Remove the meat and veggies from the marinade and discard it. Thread the meat and the veggies on the skewers, alternating them starting with a piece of meat and then one piece of each of the veggies, then the meat again and so on til the skewer is full. Spray your BBQ grid or your oven rack with non-stick baking spray and place the skewers evenly on them. Preheat your oven on high heat or ready the BBQ coals. Grill the skewers 3 to 4 minutes on each of the four sides until the meat is no longer pink in the middle. Serve with hot rice or put them in whole wheat pita pockets...



        and top with a couple of tablespoons of this...

        Cilantro Garlic Yogurt Sauce

        1 1/2 cups plain, strained, low-fat yoghurt
        3/4 cup finely chopped cilantro
        4 1/2 tablespoons fresh lemon juice
        1 1/2 teaspoons finely chopped garlic
        1 tsp salt or to taste
        Cayenne pepper to taste
        Mix all ingredients and refrigerate for at least 30 minutes.

          Stirly, don't want to hijack the thread either but any recipe you have posted always makes me sit up and salivate! If it's not too much trouble anything you post in Recipes would be very valuable IMHO.

              Thanks a mil for the recipes Stirls!!! Cannot wait to try them all out!

              Today was a fair to middlin day.

              Breakfast was egg and toast.

              Lunch was turkey sambo

              Dinner was small piece of quiche and brown bread

                    Breakfast: cheddar slices, curly leaf lettuce, cucumber slices, cherry tomatoes, prawns, light mayonnaise.
                    Lunch: same as breakfast with a couple of peeled nearly-hard-boiled eggs.
                    Dinner: home made vegetable soup (onion, red pepper, green pepper, carrots, celery, miniature new potatoes and tinned tomatoes).
                    Liquids: enough coffee to sink a battleship (made with semi-skimmed milk).

                      Reccie I am truly impressed with what you ate today. That soup sounds wonderful. I love soup. Any kind. Oh, you just reminded me that I make a fish soup that is so delicious and really easy to make. I'm going to bore youz to death with my recipes. It's not that I think that I'm a great cook or that I cook better than others, I've just developed or adopted some very tasty recipes over the years and try to cook things that are fairly simple to make but very tasty and nutritious as well. Some of them are a bit high in cholesterol, admittedly but then you can't live on celery sticks and carrots all the time. :H Again :goodjob: on sticking to very healthy food today.

                        Stirly, you're not boring us to death with your recipes at all...quite the opposite. Please post as many as you are able. I plan on trying your chicken, rice and cabbage recipe tomorrow. Just need to buy some chicken first...

                          It's not my recipe. It's the recipe of a woman who had a cooking segment on several of the morning shows here. I followed her religiously and tried many of her recipes. Good, home cooked food is what she does and man, does she do it well. She has a restaurant here in Athens and one on the island of Paros as well. Her name is Argiro Barbarigou. Oh Reccie - guess what I found. I just now looked her up and she has a site in English and her recipes are there.                           This is one of her recipes that is to die for. I saw that you had prawns today so I bet you will like this. I translated this some time ago so I could share it with my sister. Here it is...

                          SHRIMP ?SAGANAKI?

                          (2 servings)
                          12-14 fresh or fresh-frozen shrimp #4 size
                          1/2 medium-size green bell pepper, seeds removed, thinly sliced
                          1 small onion thinly sliced
                          4 tbsp. olive oil
                          1 can (400 gr.) peeled and chopped tomatoes
                          1 large clove of garlic finely chopped or ? tsp. garlic powder
                          2 shakes cayenne (hot) pepper
                          2 large pieces of feta, crumpled or broken into pieces
                          little chopped parsley if desired (I didn?t use it but another recipe does)
                          fry pan big enough to hold all the shrimp in one layer.

                          Remove the ?whiskers? and legs of the shrimp but not the shells, and place on paper toweling to dry. Slice pepper and onion, chop garlic. Heat oil in a fry pan. When it is hot, add the shrimp. Cook 30 seconds on each side and remove to paper toweling to drain. Add the pepper and onion to the oil. Saute for a couple of minutes and then add the tomatoes, garlic and cayenne pepper. Cook covered about 10 minutes. Add the shrimp and cook 4 minutes on each side. Be careful the sauce doesn?t get too thick. If it does, just add a little water. If it is too watery, cook uncovered. After the shrimp are cooked, remove from heat, sprinkle the feta on top, put the lid on again and wait 30 seconds or so until the feta has softened. Serve over plain cooked, buttered rice. You could serve it with any kind of pasta too, I expect. We really enjoyed it with rice.

Add water if necessary. If it appears to have too much, leave the top off the pan and increase the temperature a bit so the extra liquid evaporates. Stir often to avoid the rice sticking to the pan. When the rice is cooked and the liquid has been absorbed, remove from heat and adjust the salt, pepper and lemon juice to taste.

                                Reportage...

                                I had a go at the rice, chicken and cabbage casserole this afternoon. Very easy to make and nutritious and tasty. And it has an interesting texture (made with brown rice). Definitely going to make it again. Would guess that it might make good comfort food on a cold winter night. The quantities in the original recipe are huge though. I made it with 150g cabbage, 150g skinless chicken breast, a medium onion and 1/2 cup of brown rice and that made 2 helpings. Served it on a bed of uncooked baby spinach leaves to add colour. Burp!!! My kind of dish cos you make it all in one saute pan so there's next to no washing up. :goodjob:
