Now, you have to eat a variety or you'll get bored. You already had an egg for breakfast.
These are zucchini...
I can give you some recipes but there's no point in writing them out if it's not something you're interested in. Here are some ideas I had, just let me know if you want any of them. If not, no problem.
Mixed greens (lettuce) salad with chicken or tuna.
Stuffed peppers (baked in the oven) with rice, currants (dried black raisins) onions and parsley. They are incredibly delicious.
Chicken, rice and cabbage casserole
Mixed roast veggies (can be done with chicken or with meat patties)
Stirly's hamburger patties (for cheeseburgers) Very tasty, very low fat.
Spinach and rice casserole
Bean salad (chick peas, kidney beans)
Stuffed zucchini with ground beef, rice, onions and dill and an egg/lemon sauce
Confetti salad with lettuce, red pepper, and corn
Chicken skewers (BBQ or grilled in the oven) with peppers and onions
Grilled oyster mushrooms
All of the recipes are very tasty but also easy to make and I even altered the stuffed pepper recipe so it doesn't take too long to prepare. The idea is to eat simple, nourishing but tasty food so you like what you eat and also so you're not spending hours in the kitchen and you don't get bored eating the same things every day or at least the if you're eating the same veggies, they can be prepared in different ways and combinations.
And why does eggplant scare you? :HHave you ever tried it?
Oh, and do you use olive oil?
And one more thing... have you ever eaten veggies like broccoli and cauliflower raw? The taste is quite different. For every 60 seconds that you are angry, you lose a minute of happiness.

I do find tho, as someone who NEVER ate breakfast - the days I do have porridge I don't even think about food till mid-afternoon so I reckon it's great - I do add jumbo sultanas and mixed seeds and honey to it so probably full of calories but has to be good for me."It's not your job to like me, it's mine!"

Yes Molly, but the calories from the porridge, the raisins and the seeds are, as a combination, low fat and very good for you. As opposed to say a plate of fried eggs, sausages and bacon. Or even a Maccie's Muffin... 300 calories total with 110 of them from the fat content.
How many calories are in a McDonald's Egg McMuffin?
Oney, I will work on getting the recipes posted over the next couple of days. Basically, I'll try to do two-portion recipes since I gather you'll be cooking them just for you and then if the kids or Rob try something and they like it, you can just double or triple the amounts. For every 60 seconds that you are angry, you lose a minute of happiness.

Regarding eating breakfast, I have made sure to eat it for the last two weeks and the weight is steadily dropping. One of my very best friends is a personal trainer and workout King, and I told him "I'm so hungry a couple of hours after I eat breakfast", and he said "Thats because your body is burning twice the calories now that you've fed it"....makes sense...I was NOT hungry at all when I skipped breakfast, and that's because my body was hibernating!:heart:I love my daughter more than alcohol:heart:
Believe in yourself. You are stronger than you think.
