Looks yummy, but I may need to use seared Ahi - not a fan of salmon, though this looks raw/smoked so I could take small doses. Are those hash browns the pre-made sort?

EDIT: a sauce or something might be nice. Is this for brunch? Wasabi aioli is what I'm thinking.

Yes, salmon is smoked and ***guilty*** using pre-made hashies that morning. Sometimes life's too short to make roestis. Hey - I've just been talking to Mrs. Google about your poblanos. I don't think we have those here. They look large like bell peppers but with more punch I expect?

Lol - No just asking because I have them! Some things are better from scratch and some are just too much work. Yes poblanos are darker and have a somewhat different flavor, though they are both fairly mild. Thinner 'walls', too, for lack of a better word.
