        Reccie, my folks make stock from left over chicken and turkey carcasses whenever they have them, but other than cook 'em in a pot of water and slimmer slowly for ages, with some veg and herbs, i have no idea as to what else one needs to do. Seems pretty straight forward though - and does add MUCH flavour to soups etc. WAY more (imvho) than stock cubes can (although i personally use the latter!)

        Reccie - CONGRATULATIONS! Day 1! No mean feat. Carry on Reccie-ing, you're doing such an amazing job! :woot:

        Inchy just saw yer day 10 on the Sobert Shouty Outy thead - to repeat - :woot: feckin awesome!

          Making your own stock is very worthwhile. Not a hell of a lot of effort, and bursting with flavour.

          Break the carcass apart, braise an onion until soft, add cubes of carrot and potato. Maybe a celery stick or two. A few bay leaves, ground black pepper, whole allspice, a few cloves... whatever you have in the line of fresh herbs. Add bones and skin to onion mix, pour on 2l of water and simmer away for an hour or two. Strain and use in soups, stews etc

            Hi Army!!

            Rec, I do make my own chicken and veg stock. Definitely NOT a waste of time. I posted about it in the real food thread, so copying it here:

            I know the point of this recipe thread is for whole foods, particularly low-carb eating. However waste is one of my hugest pet peeves, so I thought I'd share a couple ideas.

            1) Make your own chicken/turkey stock. Take the carcas from a roasted chicken or turkey and put it in the biggest soup pot you can find. Cover it with water. Add roughly chopped carrots (3), celery (3 stalks), onion (1), and Italian spices (basil, oregano, etc). Add spices you like - don't forget salt and pepper. Boil for a couple of hours then remove the chicken bones. Preserve them to remove the meat.

            Strain the broth through a cheesecloth and discard the vegetables and spices. Remove as much meat from the bones and keep for soup. Broth can be clarified but this is not necessary. Just based on preference.

            2) Make your own vegetable stock. When I am preparing vegetables for everyday meals, I save all the stuff I cut off my vegetables (broccoli stems, carrot ends/eels, potato skins, etc). About the only things I don't save are lettuce leaves and onion paper (they don't freeze well). I put them in the freezer until I have enough to make stock.

            The method is the same - put it all in a pot with as much water as you can. Add spices and boil for at least a couple of hours. Then strain through a cheesecloth and store. The more vegetables you add the better. I will usually add onion, celery, carrot to ensure the taste is OK.

            A tip is to put some stock in ice cube trays in case just a bit is needed.
            Well it's all right now. I've learned my lesson well. You see you can't please everyone, so you've got to please yourself.

                  Thanks arsey...I'm giving the chicken stock a go now...thought it would be worth trying it at least once in order to see what the end result is like, but I wasn't sure if folks bothered with this sort of thing in the real world.

                                Doing well, Molly, thanks! My husband just brought my puppies home, then left again, so all is once again right in the world :h:h:h

                                I'm not sure what I'll get up to today, but not gotten much done so far. Maybe some yard work if it doesn't get too humid.
