Dottie, I hope you made something good for dinner. It feels good to get all that shopping done.
Mama, Mrs. Fen is heading to Jacksonville the weekend of Oct. 24 -27...if I go, would you maybe hook up with me?
Tonight, I did a "Cooking Light" recipe. Spring rolls with Hoisin/peanut dipping sauce. They were wrapped in rice paper and contained a fresh basil leaf (each roll), a quarter of a green onion, a strip of tofu, a tablespoon of rice noodles, napa, carrot, and shiitake mushroom. Those things were AWESOME!
Pauly, I'm glad you and hubs are there for Louie.
K9, geez...I can't wait until you're in your new job. :h I hope you can tell us the weird crap you're going to hear!

Zennie, I hear you about aging parents.
I'd cleaned all my mom's bird feeders last time I was there, and filled them all today. I gave her a choice of meals on wheels or a CSA kitchen here who makes meals from scratch with veggies from local farms...she chose the CSA! She'll be getting two meals a week from them. I'm giving her a month's trial in case she hates it, lol! I brought her a small, potted rose that I will replant for her outside.
Mrs. Fen and I are taking her out for dinner on Thursday for Mother's day.

Basil Summer Rolls With Peanut Dipping Sauce
8 ounces extra-firm tofu, drained
1 1/2 ounces uncooked rice vermicelli noodles
5 tsp. rice vinegar, divided
2 T lower sodium soy sauce, divided
2 T dark sesame seed oil
1 1/2 T hoisin sauce, divided
2 tsp. sambal oelek
1 cup thinly sliced napa cabbage
3/4 cup julienned carrots
1/2 cup sliced shiitake mushroom caps
2 T fresh mint leaves
8 8" rice paper sheets
8 large basil leaves
4 green onions, cut into two 4" slices
1 1/2 T peanut butter
1 T water
1. Cut tofu crosswise into 4 slices. Place tofu on several layers of paper towels. Cover with additional paper towels. Let stand 10 minutes, pressing down occasionally. I put a cutting board with two number 10 cans of tomatoes to weight down the tofu. :H
2. Cook noodles according to package directions. Drain and rinse with cold water. Drain.
3. Combine 1 Tablespoon vinegar, 1 T soy sauce, 2 T sesame oil, 1 1/2 teaspoons hoisin sauce, and sambal oelek in a medium bowl, stirring with a whisk. Stir in cabbage, carrot, mushrooms, and mint. Toss gently to coat.
4. Add hot water to a large shallow dish to a depth of 1 inch. Place 1 rice paper in dish. Dip for about ten or twenty seconds, until soft. If too soft, you will have a devil of a time wrapping it around your ingredients, so be conservative.
5. Place a dry kitchen towel on a work surface. Place rice paper on towel. Place 1 basil leaf on bottom third of sheet, leaving a 2 inch border; top with 1 tofu slice, about 3 T of cabbage mixture, about 2 T of noodles, and 1 onion slice. Fold bottom of sheet over the filling. Fold sides of sheet over filling; starting with filled side, roll up, jelly-roll fashion. Gently press seam to seal. Place roll, seam side down, on a serving platter (cover, to keep from drying out). Repeat procedure with remaining wrappers, basil, tofu, cabbage mix, noodles and onion.
6. Combine remaining 2 t vinegar, remaining 1 T soy sauce, remaining 1 T hoisin, peanut butter, and 1 T water in a bowl, stirring with a whisk. Serve with summer rolls.

Yep fen it was meatloaf but with ground turkey...we have made a veggie loaf from the HH cookbook. It was good but meatloaf is his specialty so I let him have at it..

Hey friends.....
it's been a lazy day here. Mom & I went over to the casino. Neither one of is a gambler so I cashed out after I won $8.00 and Mom lost $20.00. That was it for us.
Fen - thanks for the recipe. Sounds good. We have made eggrolls before but used crab in it. I don't eat that anymore so I'm going to try your recipe."Only I can change my life. No one can do it for me.".....Carol Burnett
