It's snowing hard at the moment and it's so beautiful! Even better is the fact that I don't have to go anywhere today. Looks like a good day to make some chicken noodle soup and apple bread.

Thanks for the link dill, I think you said it best when you said everything in moderation. Bubba and I try to eat as healthy as we can but not to the extent that we cut out the things we enjoy eating.
Our cold spell has started moving in, -15C (5F) here this morning with colder temps and lots of snow in the forecast starting tomorrow.

I've done my homework and read some things about coconut and cholesterol, and it seems the thinking currently continues to lean toward avoiding coconut oil due to high saturated fats content, as you said, Cowboy. But coconut is high in fiber which is good for lowering cholesterol. So to me, using coconut in recipes is probably very safe for people with heart disease. I will also still use coconut oil when I prepare our Thai food favorites, but we don't eat them very often. Moderation is the key. I guess. Cowboy, Hungarian Cabbage Rolls are one of my absolute favorites! And the stuffed peppers tucked away in the freezer are a great idea.

Looks like we're all coconut fans, just talking about it makes me want to do up a batch of macaroons lol. We're big cabbage lovers as well, and sauerkraut. Bubba and her mom just did up a big batch of holopchi (Ukrainian sour cabbage rolls) on Sunday.
Yesterday I spent lots of time in the kitchen and made 8 stuffed peppers using antelope hamburger with the rice, we had one each for supper and froze the rest in pairs for easy suppers in the coming weeks.
Bubba and I do the NYT Wordle and Canukle (Canadian version of Wordle) every morning over breakfast lol. We all seem to have so much in common!
