    Hi Flyaway, I didn't notice a difference in how I felt without milk either. Of course, I was still eating minute amounts of cheese so that is perhaps why. I was pretty certain I wasn't dairy sensitive!

    I have determined over the last year that both milk and gluten give me cravings for more milk and gluten and ... alcohol! I cut wheat out just to help with the alcohol cravings. I realized that cutting out both dairy and gluten helped me go AF.

    Got to my lowest weight in several years this week then screwed it all up with a bottle of wine PLUS a glass last night. Not ironically, I've been giving in to my ice cream monster for the past week or so. The good news is I'm disgusted and determined to be AF. My resolve had obviously muddied when I contemplated buying wine then did. I needed a reminder of the crappy feeling. I'm just lucky the reminder isn't snowballing into a cycle - I bought wine for this very reason - wine gives me a nasty hangover so I'm less likely to do it over and over again.

            Deter will be the expert witness on this question, however, I'm guessing its got the same impact on insulin as many artificial sweetners and natural sweetners/refined. Which is that your body perceives sweetness, and expects the calories to come with it, when they don't, it gets confused or still acts like you did. Not really sure but I've heard that about the widely used artificial sweetners.

              I don't recall seeing that stevia is prohibited from paleo. is that in Robbs book?
              it's certainly TONS better than sugar/sucrose but I'm sure there will be some insulin signalling issues with the perception of sweetness as Bruunhilde describes. this will effect different folks to different
              degrees. I just prefer to get my sweets from fruit now. natures perfect dessert

                I am not there yet! I made some yummy ice cream - with a can of full fat coconut milk, chocolate powder, and stevia. It was so good!
                I wonder if I have eaten so much stevia over the years that my body wouldn't get tricked into an insulin spike.

                      I have one too, but I think if it is just all mixed and then gotten almost frozen it would work. Full fat coconut milk is so creamy, it just seems to make itself! There is no deprivation with Paleo!

                          very interesting, Determinator! Especially how much wheat has changed. After watching Food INc, I am not that surprised.
                          Do you, or anyone here who is wheat and grain free, know why - well, I had one bite of pasta earlier and now I am exhausted. I have no energy, none. Maybe it is the wheat after not having any, I don't know. But I have heard of this reaction, I think. Anyone have similar experiences?

                            Lila, you sound like you are chronically gluten intolerant. which is fairly common. for me I get bloating, weight gain, mood problems and skin/dermatological problems.

                            incidentally Dr Davis in his podcast (posted above) also mentions folks that test negative for gluten intolerance (celiac disease) can still have extremely bad reactions (even fatal) to wheat products. this wheat is an odd thing indeed. There are many protein fractions within wheat aside from the well known gluten and gliadin that are troubling.

                                good stuff Cedars. there is definitely a causal relationship between grains and all kinds of systemic irritation. it's becoming clear that it's more than gluten as well which is interesting but not surprising given there are so many complex compounds in grains. Grain-free is certainly looking like a safe bet.
