Spacebebe, good question. I used coconut oil in place of cooking in dishes where a tropical flavor is intended. like most Asian, also north African, Cuban, Central American dishes even can often benefit from the unique flavor of coconut oil. if you prefer less coconut flavor there are some brands that are very non-aromatic.
on of my fav veg dishes now is sweet potatoes or yams roasted with coconut oil and of course....garlic! it's so good its crazy.
Sunshine, you're so right and for a variety of reasons. there are only 3 macronutrient food groups:
proteins (essential to life)
fats (essential to life)
carbs (not essential to life)
if we shift daily caloric intake to favor proteins and fats and decrease carbs even by a reasonable amount everything starts to work better in the human body/brain. this evens out our blood sugar spikes (this is more important than most folks realize for health). and it does indeed lessen the 'carbage' cravings.nosce te ipsum

that's super Spacebebe. also try using veggies instead of pasta, it's surprisingly very very good.
you can whiz up cauliflower in the food processor just until it takes the shape/size of pastini or orzo. then saute that in olive oil or butter and your good to go.
I'll also serve a meat marinara sauce in a bowl with arugula or spinach. it may sound weird but it's awesome.
finely sliced cabbage is also great raw or saute'd.nosce te ipsum

D, sweet potatoes roasted with coconut oil and garlic sounds awesome - thank you for that suggestion!
I just bought my first tub of coconut oil a few weeks ago and though I love the taste, it's still a struggle to incorporate it into my cooking.
And I know this isn't the cooking forum, but any other suggestions on using veggies as a pasta substitute would be welcome!AF since 6JUN2012
