    Bruun, Why exactly are you wanting to eat fermented food? Is it supposed to have health benefits?

      oh golly, so much to say! you gals are gonna keep me here till evenin'!

      ok, so, bruun, right back atcha with those compliments! i LOVE the companionship, too. ain't we blessed?! and please don't apologize for your confessions or anything else! that's what this place is for; it is a very safe place to do it, and we need that kind of venue in our lives. as you put it so well, we're all coming together here from the same struggle in order to support each other.

      yes, go for the taste first. don't even burden yourself with the notion of a fermentation project. kraut is more sour than bitter, don't you think? i hope you love the curried kind!

      is, my mom has one of those kraut crocks. as i am sure you know, you don't need one of those. a wide-mouth mason jar will work just as well. i have found that the trick is getting it into the fridge on just the right day. too soon and it's not fermented and bubbly enough; too late and it's too soft and tastes off. (i mentioned that i used to use goat whey to ferment. for those who don't know, you can also use the liquid on top of plain yogurt (whey) for the same purpose.) and yes, dear isolde, you may come live with me. we'd love to have you. but i'll make you harvest brussels sprouts. (ooh, i bet they'd make a mean fermented something!)

      oh, burning man. i've never gone, but now i have a better appreciation for it for sure. sounds cathartic, to be sure, is! my kid cuz just got married in vermont. she has always loved bm, and she had some friends up from dc twirling fire after dinner. it was very cool entertainment!

      hope you don't come down with something, isolde. i really think that the grapefruit seed extract is to thank for my having only been sick for two days. i was touting it at work all day yesterday. great stuff! i'm sipping vinegar water, too. (tastes so much better than beer. today, anyway.)

      ok, i'm sure i've missed something... oh yeah, katie, fermented foods are VERY good for your health, expecially lacto-fermenteds. they aid in digestion tremendously, and they impart wonderful micronutrients and minerals.

            Thanks Rudy, I'll have to look into the benefits of eating fermented food ....doesn't really sound too yummy, but I have tried kimchi before and it tastes okay.

              give it a whirl, katie. if you don't like it at first, try, try again. i forgot to include that fermented foods are full of probiotics which are real good for digestion.

              i meant to mention that my bible on the topic is 'nourishing traditions' by sally fallon. (does anyone have this book?) not only is it full of simple recipes, there is also tons of information in the side bars about diet and nutrition and primitive cultures and how many of them tend to be the healthiest of people due to things like fermented foods and animal fat, which provides vitamin d and other good stuff, in which many of us are very deficient.

                  Rudy, thanks for the feedback, I gave that Nourishing Traditions book to my German friend last xmas, in fact. Does it have fermenting recipes? I don't have a copy (or do I?) but if it has fermenting recipes I have to point that out to her since she loves fermented stuff and worships at the door of her fermenting wizard friend weekly. Have you fermented milk products? That wouldn't be yogurt, would it? Educate me....

                  Katie another reason to eat probiotic food is to balance our guts - since antibiotics have been used so much, more cancer and other problems have become rampant, there is a theory that much of this originates from an unbalanced gut.

                  Yeah I have no idea what kind soul gave me a fiver, but maybe it was just one of you softies enjoying the communal campfire and if you haven't spoken up yet, please join in. Its not a clique here.

                    rudyb, i have a copy of nourishing traditions but will confess it hasn't made it into my kitchen as a regular fixture. we get a mixed 1/4 of a young cow every winter, and i have numerous soup bones still in the freezer to make broth with. but i haven't done that yet, or anything else.

                    (((((LadyLush)))))) I'm so glad Murph was here with the right support in your moment of intense need. I can relate to how you might have felt. My "bottom" was never DUIs or any of that stuff. It was being so alone with my drinking problem that I saw no solution other than suicide. I was too chicken to follow through and boy am I grateful for that. Murph may have an over the top raunchy side, but I have also seen the intense compassion he has shown helping people here. I miss that. And I'm so glad he helped you LL.

                    Bruun- that is quite a list of smoothie stuff there. I would like to come share your kraut. Yum!

                    Is that must have been an amazing experience. Have you come across Determinator here at MWO? He didn't go to B.M. this year but has in the past, and his wife (Determinatrix here) helped set it up this year if I understand that correctly. I can't even imagine what building that structure must have entailed! (and all the other stuff there - WOW)

                      yes, fallon provides ample recipes for fermenting, and most of them are easy to follow, though an occasional ingredient may require some unearthing. and i've only ever fermented kefir, which is from milk (preferably raw). lacto-fermented, i believe, just means using lacto-bacilius as the fermenting agent, which is what you find in fermented milk a la yogurt whey. ask away, i'll tell you the answers i know. cool about your german pal and her tastes. i wonder what she thinks about the book.

                      doggy girl! hi! yeah, that bible book sits on many-a-shelf. until you're used to creating the delights therein, and unless you have abundant counter space upon which to do it, it's an easy loss in the troves of potential recipe book shelf-liners.

                      and dg, you're cordially invited to that party you described! togas are optional. huipiles and danskos are encouraged. i'll provide the glasses. i just got a nice set of tall, thin ones from salvation army at two bucks apiece. score!

                      five star hotel - love it! it sure is cozy here by the campfire that they have in the patio out back. no invitations or rsvp's necessary.

                        I must have had a funny look on my face.

                        My husband: What are you reading.

                        Me: Something about slimey vinegar.

                        Him: What do you do with it?

                        Me: You're supposed to drink it. It's good for you.

                        Him: You're supposed to drink the slime?

                        Me: It depends on who you ask. The slime is called mother.

                        Then he was the one with a funny look on his face.

                        I told him about the mushroom thing and he said his mom used to make a tea like that with a fungus that grew on top. He said it tasted like really mild apple cider vinegar. I guess that's not so strange as it seemed at first. My mother used to get irritated with me because our pickles would get dried out because I loved to drink the juice from the jar.

                        Anyway, this is an educational thread.

                          so glad to be of help, sweet ginger. and what a great dialogue you write between you and your hubby. so his mom was a hippie, too? (mine actually wasn't; she missed that wave by a few years, but she's still very crunchy at heart, as some of you know.)

                            rudyb, i eat the pickles, and then put sliced cucumber in the juice and just keep it in the fridge for a day or 2 and eat the cukes. they have a pickly flavor but are still cukes. i like those.

                              Ginger, that was HILARIOUS, thanks for sharing, I was rolling when I got to the end of your dialogue. LMAO!

                              DG - think I'm going to the garden center today, to buy a bunch of grasses to plant. I need drought-tolerant stuff, and I love the mature blooming grasses this time of year. Particularly Pampas and other XXL grasses. They're all blooming right now and they take me back to my days flying over the Oakland airport before they razed all the wild ones there and put cement buildings in their place.

                              Watched two movies yesterday, Something Borrowed and WinWin. Did errands, etc. How about you, DG, plans for today? Anyone get tomorrow off?

                              Ruuuuu, I'll have to advise my friend to revisit that book so she can ferment her own stuff.

                              Got my second loaf of SmartCarb bread so am enjoying a very low carb diet these days but am still overdoing it with the AL. Swore this weekend I'd be strong. Stronger. So hard when you're lonely and bored and all there is to do is chores and laundry and weeding. At least my gut isn't falling apart like it used to.



                              So how does one paste a picture into the post, all I've done so far is manage to attach things. I know you all are good at this stuff, I've seen pics here and there. Advice s'il vous plait?
