          Happy un-hung Monday ABerooooos!

          got a busy sober day so not much time but got this put to paper:


          my yummy healthy snack as promised:

          just came up with this out of the blue and it's a winner. i was going to take a picture but scarfed it already it's also super easy.

          first roast some thick (1") slices of butternut squash in coconut oil until toasty brown.

          meanwhile in a bowl combine:

          EV olive oil
          medium to finely ground almonds (don't buy pre ground)
          lots of fresh garlic
          good dose of a quality curry powder
          cherry tomatoes cut in half or quarters depending on size
          S&P to taste

          I don't measure anything so just add what feels 'right' to you. the olive oil and nut mixture was like tahini, but a bit thinner.

          combine the tomato dressing and pile onto the roasted squash rounds. for some reason this flavor pairing is just fantabulous. enjoy!

                Probably - but don't overcook the squash or sweet potato or else it would turn to mush - is that right Det?

                Haha - its asparagus season here - yippee!! I am also forgaging for spring 'weeds' - some of the tender shoots are edible of you know what to look for

                  speaking of asparagus, Dx and I just had that roasted with garlic with lunch. yum-o-rama!

                  Pauly, I'm getting better about letting go of sad and regrettable things from my past. it's a skill I've had to develop for sure.
