I personally eat tons of vegetables and love them. I think those low carb diets that don't let you eat veggies are pushing it too far and aren't based on science - plus, the fiber and phytochemicals in vegetables are good for you. Eat up !

      Ok, then, I dee double dare anyone to try these and not like them :H!

      Seared Scallops & Deconstructed Brussels Sprouts
      Serves 2

      Ingredients

      Olive oil
      6 sea scallops, rinsed and dried
      1 pound brussels sprouts
      Handful slivered almonds or pine nuts
      Handful golden raisins
      Splash balsamic vinegar
      Salt and pepper

      Method

      Cut the stems off the brussels sprouts and tear away all of the leaves. In a pan over medium high heat, saut? the leaves in some olive oil. Add the slivered almonds or pine nuts, golden raisins, and a splash of balsamic vinegar and season with salt and pepper. Cook until the nuts have toasted and the leaves have caramelized. Set aside on a plate.

      Return the pan to the heat and add more olive oil. After the scallops have been rinsed and patted dry, season them with salt and pepper. Sear them for about 2 minutes per side. Don’t crowd them! Serve the scallops over the deconstructed brussels sprouts and enjoy!

      I usually use coconut oil and dried cranberries or cherries instead of raisins and often include sweet onion.

          That sounds yummy, NS! What time will it be ready?
          I love scallops too! I haven't ever tried to buy them at the store though. Do they sell them? I'll have to look. I usually just get them when I go "out" to eat.

          My brussels sprout recipe is just to cut off stems, wash the sprouts and cut them in half. Place in a bowl and coat with olive oil and balsamic vinegar, a little sea salt and fresh pepper. Then roast in 350 degree oven till done (depends on the size of the sprouts). Very simple and delicious. All my girls love it. Hubs doesnt care for them, but sometimes, he gets outvoted!

            Wow. I had lots of catching up to do! Last night was another win for son's team. We're first place in the section and will be going to playoffs. This is really exciting.

            NS, I could tell you were always the mediator and looked after others then put your needs last. I'm glad you are putting yourself first and realizing that you can't fix everything. They have to figure it out. Good for ya, Sista.

            Nar, that had to have been tough with your husband. You went through helll. So glad you've been to counseling together and have worked on your relationship. It does take lots of work to heal. And to not put all the blame on him is huge. You're super strong to be able to do that. Thanks for the article. Gonna read in a bit.

            Star, that's a great roll to help Byrdie in the nest. She's got a lot of work to do up there, and so many newbies in and out. It's really hard to keep up. So glad to hear that your daughter's situation may be progressing in the right direction. Stay strong.

              NoS - won't you please post that recipe in the recipe corner? It's going to get lost here, and I want to make it as soon as we get some BS (the green variety, not the brown blobs) in the shops; they're actually quite uncommon here, as are scallops. Think it would work with broccoli?

                  Thanks to ye all for warm welcome a few days back. Had no lappie and found it difficult to read back and post on my phone.

                  Congratulations to all racking up the days :goodjob: there are so many of youse it's hard to keep track- ye really have a great support system going on down here- great work!

                  NS- I would try your Brussel sprouts- sounds delish! But could we have just a teeny bit of chocolate for afters?!

                    I'm not sure how those other recipe threads work (the format is different ). It is fine with me if you want to add this one to the right place.

                    EDIT : What makes it so good are the separated thin leaves of the BS so I don't think broccoli would have quite the same effect.

                    The Real Food thread was pretty active for awhile - there are some really good ones in there.

                        May I be so dumb and ask, what the difference between the dark and say milk choc is? Also, do you eat fruit?

                          Hello ladies,
                          Yep j-vo it really doesn't matter where they sell it I am not buying...
                          Warmer today so we are off to run a few errands. I am finishing off my morning smoothie...just love it. Embarking on a diet challenge on the 3rd. Need to pick up some things to cook. DH is not looking forward to anything that smells like a diet but he will be hungry if he doesn't eat it..;-))
                          I am not a fan of brussel sprouts....bleh....but broccoli is OK raw not much of a fan cooked. But I do like most veggies...
                          Back later to try and catch up .

                            Omg, this looks delicious. I've got Brussels sprouts and cranberries in the house, so all I need are the scallops. Now I know what is for dinner tonight.                               That isn't a silly question at all! (And I'm pretty happy today .) I do eat some fruit but not a whole lot at once.

                              The darker the dark chocolate, the less other stuff, including milk and sugar, is in it. I'm not sure what % chocolate milk chocolate is but the dark comes in various percentages such as 65%, 72%, etc. The higher the percentage, the less sweet it is (and the better for you). If you're used to sweet chocolate, you might want to work your way up slowly because something like 88% will taste really bitter to you. It is an intense taste so a couple little squares is all you would really want at a time.

                                Ava, your daughter sounds Just like you! It's funny, I don't buy coffee and walk around here because it would freeze right away. I left my tea in the car yesterday and it was frozen solid this morning. I had to soak it in hot water. Hey, I was in Costco yesterday and thought of you. They had some yummy black licorice there. I squeezed the bag a few times then put it back. What a thrill
                                I didn't buy it because I would have ate it all!

                                I'm getting my hair done right now. Cut and coloured. Not that I have any grey hair or anything!

                                Another Sober Saturday. Going to yoga and then to visit my friend who waxed out on the ice and hurt herself. She ended up in emergency. So icy around here.
                                -17c here and +28 in Orlando. Yip yip yippee!
